The harvest takes place towards the end of September (depending on the vintage) and is done manually into 20kg boxes. The traditional vinification lasts for 15 days. The aging in wood barrels enhances the bouquet of the wine. Hints of vanilla, slightly tannic flavour with a long and pleasant finish.
